Fresh mushrooms, sliced

jalapeno or green peppers, sliced

small onion, sliced

red chilies to taste

Heat oil in wok over high heat.

Stir-fry chicken with garlic until done.

Add water, mushrooms, pepper, onion, fish sauce, sugar, salt and basil leaves. Continue cooking until all flavors mix.

Serve with cooked white rice.

This type of basil, with its dark, shiny leaves, is aromatic, lends rich flavor to foods. Sawatdee's holy basil comes from Florida every week. If this dark basil is not available, use green sweet basil instead. You can grow your own in summer.
